The 16th century saw the birth of a new cuisine that abandoned old models inherited from the past and moved towards new horizons, drawing inspiration from our traditional alimentary patterns, overcoming every kind of dietary restriction and avoiding all sorts of religious involvement. At the same time convivial gestures were codified and, in an articulated context of actions and court organisation,cooks, larder-keepers, cutters, carvers and cup-bearers became part of a fascinating, sumptuous, magnificent and elegant performance.
